Mogacho Lab
From The Mill
The pilot kitchen is finally done.
It’s small. Smaller than we imagined at first. Every corner already spoken for.
But it works.
Everything has a place, even if we had to negotiate for it. The light falls right in the mornings. Surfaces feel good to work on. There’s a kind of order to it that wasn’t there before.
We’ve been looking at it as a construction site for months. Dust, wires, measurements, things half-finished. It’s strange seeing it come together.
This is where it starts.
Not a factory. Not built for scale. Just enough to make things properly.
We’ll outgrow it. That’s almost certain.
But for now, it feels right.
Contained. Focused.
Ours.
