maker's Tasting Note
We took it to a medium roast, balancing bright fruit against deeper cocoa rather than letting either dominate. Expect creamy chocolatey malt up front, red fruit and berry through the middle, balanced body, and a medium finish.
about this origin
Pollachi sits in the foothills of the Western Ghats, Tamil Nadu. Hill terrain, higher elevation, cooler nights than the coast. Cacao here ferments slower and develops more complexity than lowland origins. You’ll notice it in the finish.

We tabled this batch by hand. Three times, actually - the first two pulls came off too cold before we got it right. Batch Zero taught us more than any batch before it. Twelve bars in, we’re still learning.

Our single-origin terroir bars are made with just two ingredients — cacao and unrefined cane sugar. No additional cocoa butter or lecithin.

Storage
Store cool, dry, dark — avoid keeping it in the fridge.
AROMA Cocoa butter absorbs smells — the fridge is full of them.
BLOOM A white film may appear from condensation. Not spoilage — doesn't affect taste.
